Designed as a batch pre-mixed which is bursting with the tastes associated with Christmas time, which makes it perfect for your festive gathering. Any leftover syrup to use in brunch beverages, sweets, or to mix more rounds of this cocktail.
Bikini Recipe
Makes enough for 10 servings
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Drink (produces 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Method
For the Cordial: Put all the components into a saucepan, bring to a simmer, stirring until the sugar dissolves. After that, turn off the heat and let it to cool fully. Decant into an sealable bottle, close it keeping it chilled, it will last for around one month.
To make Cocktail Base: Pour all the liquid ingredients in a big jug, leave to sit for 60 minutes, then filter it , ideally through cheesecloth, making it fully clarified.
For serving: Pour 85ml of the premix into a stirring glass containing ice, and stir gently for a minute to chill. Strain into a chilled martini glass or equivalent, decorate with some cranberries and complete it by giving it a quick spritz with the mandarin essence over the top.
